Protein usually reaches the plate cooked, from a pan or a packet. Soaked and sprouted is an older way.

Soak a handful of moong beans or groundnuts overnight and they soften, and begin to sprout. In the yogic diet, such living food is prized as light and full of energy. Many find that soaking makes them gentler to eat and easier on the stomach.

What could you soak tonight?

What you'll need

  • A handful of moong beans, or raw groundnuts
  • A bowl, water, and a night's wait

Method

Rinse a handful of moong or groundnuts, cover with water, and leave overnight.

In the morning, drain them. Eat as they are, or leave moong a day longer, loosely covered, to sprout.

Try a small bowl a few mornings a week, and notice how it sits with you, and how you feel through the morning.
